Today I am starting my new project Baking around the Globe (what is Baking around the Globe? Its a baking project to connect bloggers around the globe by baking each others recipes, read more about it here).
I have thought a long time about the person who I want to feature here. There are an awful lot of amazing blogs out there, so my choice was not an easy one. In the end I had to think of Kelly. She is an American Cupcake who has lived in London for quite a while (actually also in Prague and India) and just recently moved back to America. Who else would fit better to be the first participant in the Baking around the Globe project than someone who has just moved around the Globe?
What I really like about her blog is that she is so authentic and has her own individual style. She blogs about what she likes, a good mixture of recipes but also book reviews, always food related of course 😉 Something that really intrigued me about her recipes is, that many of them are gluten or dairy free and some are even vegan. She bakes mainly dairy free for her husband and so she often finds ways around milk and co. which is often really clever (like here where she used tofu to make a dairy free mousse for her cake, genius!). I myself can eat everything actually, although I prefer to avoid raw milk 😉 However, I have friends and colleagues that cannot eat those ingredients and it is always a pity when you bake something nice and one person cannot enjoy it…
That’s why I have decided to bake her Flourless Peanut Butter Cookies today! Partly because my boyfriend loves peanut butter and once I tried a version of my own I actually liked it as well. But also because finally I can bring something sweet to work which really everyone can enjoy! Because flourless means gluten-free right (check that your peanut butter doesn’t contain any gluten)? These cookies are super rich and the chocolate chips are just perfect in it. I would say it ticks all the right boxes! I first wanted to bake her Mississippi Mud Pie, but when she published this recipe just a week ago I had to go for it instead! The only thing left for me was to convert the american cups into gram and I was ready to go!
The best thing about these Peanut Butter Cookies, except that they are gluten-free, is that it takes really less than 5 minutes to make them! I think this will become my go-to recipe when in need of some quick cookies. Also it seems that it is a real man pleaser as both her husband and my boyfriend are just nuts about them! I actually had to stop him eating the dough as they already looked so delicious on the baking tray 😉 So please try them once as well!

Glutenfree Peanut Butter Cookies
- Preheat the oven to 180°C (160°C Fan Oven) and line a baking tray with parchment paper.
- In a large bowl mix together the peanut butter, sugar, egg, baking soda and salt. Stir in the chocolate chips.
- Drop tablespoons of dough a few cm apart from each other onto the prepared tray and bake for 12-14 minutes.
TIP: I used my measuring spoon (1 Tablespoon) to get equal balls of dough
- After 5 minutes place cookies on a cooling rack for 15 minutes.
makes about 25 cookies
- 250g Peanut Butter, creamy
- 100g Sugar
- 1 Egg
- 1 Tsp Baking Soda
- 1/4 Tsp Salt
- 125g Chocolate Chips (the original recipe calls for 175g, but I did not have that many, anyway I didnt miss the other 50g of chocolate chips :P)
